Omero’s passion for viticulture led him to bottle the “MONTEFALCO SAGRANTINO DOCG” and begin producing organic wines, a tradition now carried on by his daughter Giusi. The family personally oversees every step of the production process, with great care given to native grape varieties such as Sagrantino and Trebbiano Spoletino. Modern technology is also employed in the winery, following a minimally invasive approach. The University of Perugia was even involved in selecting native yeasts for fermenting Sagrantino.
