Blend of grapes: 60% Sangiovese, 40% Ciliegiolo.
System of growing: Spurred Cordon. 10 years old vines.
Vine density: 4.500 vines per hectare.
Yield per hectare: 80 hl/HA (10 tons).
Harvest: Hand-picked on September.
Production policies: 15 days maceration. Three months in steel.
Bouquet: Red fruit, such as cherries.
Taste: Fresh and smooth.
Combinations: First courses with meat sauces, such as bolognese ragù. Fresh cheeses and cold cuts.
Serving temperature: 16-18°C (60-65 °F).

What are the difficulties in making grapes using the organic method?
“Our winery is dominated by a non-invasive attitude towards wine: a low-invasive attitude because of its high technology. We make the most of everything that technology can offer us: for the fermentation of Sagrantino we involved the University of Perugia and we selected with them the yeasts autochthonous from our grapes.
This has led us to highlight the olfactory characteristics of the grape: the small red berried fruits are very strong especially in years with a slow ripening. The dictates of organic farming allow the use of fish glue, casein and albumin, but we avoid them.
We respect the vocation that each type of grape expresses, and every day we work to enhance the identity of the individual vineyard”.
