From Cartizze, a small hamlet in the Valdobbiadene area where the unique exposure to the sun and exclusive make-up of the soil guarantee a superior quality. Technical information Area of production: Vineyards cultivated on the hills of Santo Stefano, in the area called “Cartizze”.
Type of grapes: 100% Glera (formally known as Prosecco).
Method used: Wine making in “white”, soft pressing and fermentation at controlled temperature. Sparkling process and natural fermentation take place in the autoclave for about 50 days at 13 – 14°C.
Alcohol content: 11,5%
Sugar residue: 24 g/l
Pressure at 20°C: 5 bar
Organoleptical features Colour: Staw yellow with a hint of green. Delicate brilliance and persistent frizziness.
Perfume: Fruity, aromatic and wrapping. An inkling of ripe peach and pear with a floral smell of wisteria and jasmine.
Taste: Velvety and deep, well balanced with acidity and sugar. Solid and supple body.
Aftertaste: Pleasant and persistent. The smells remind of ripe fruit.
Food affinities: Wonderful as an aperitif or with pastries or fruit based cakes.
Serving temperature: 6 – 8°C
