Pinot Noir variety is considered one of the most noble red grape variety in the world and also one of the most difficult to understand. The origin of this grape variety is believed to be claimed by
the French region of Burgundy.
Grape Variety: Pinot Nero – Blauburgunder.
Denomination of origin: Pinot Nero – Blauburgunder Alto Adige – Südtirol doc/dop.
Harvest: hand-picked in small boxes.
Vinification:
Grapes are gently crushed and destemmed. Fermented with skin maceration in stainless steel tanks at controlled temperature. Each fermenter is pumped-over daily to maximize the flavor and color extraction.
Ageing:
Matured in big oak casks.
Color: pale ruby red.
Aroma: rich, fruity, with hints of raspberry, mulberry, cherry, violet and spicy aromas.
Flavor: intense, vibrant with underwood notes.
Food pairing: thanks to its harmony matches well with red meat dishes, medium-long aged cheese and “guazzetto” fish stew.
Serving temperature: 15-16° C.
