Vinification and ageing: Spontaneous fermentation on a pied de cuve of our grapes, without sulfur dioxide, in cement vats. Up to 8 days
of temperature controlled maceration.
Ageing: 12 months in cement vats, 4 months in bottles.
SERVING SUGGESTIONS: Grilled meat and fish, mild cheese.
RECOMMENDED TEMPERATURE: 16°-18° C.
