Montefalco Sagrantino Passito is a sweet wine obtained through the appassimento method, where the grapes are dried on racks. It represents the traditional version of Sagrantino wine, with its name derived from the Latin word “sacer,” meaning sacred wine consumed during Christian tradition festivities.
Variety: 100% Sagrantino grapes.
Harvest: The grapes are hand-picked at the end of September, carefully selecting the sunniest and ripest clusters. They are harvested using single-layer crates, ensuring the integrity of the grapes.
Appassimento:
The grapes are dried on racks for approximately two months, allowing them to concentrate sugars and develop intense and complex aromas.
Winemaking:
After the drying process, the grapes are gently placed in fermentation tanks by gravity. Fermentation and maceration take place at low temperatures, preserving the aromatic characteristics of Sagrantino.
Aging: Montefalco Sagrantino Passito ages in large oak barrels for at least one year, acquiring structure and complexity. It further matures in the bottle for an extended period.
Tasting Notes: This wine exhibits an intense ruby red color, tending towards garnet with aging. The nose is rich and complex, with prominent notes of cherry liqueur, wild berry jam, candied citrus peel, and spices. On the palate, it surprises with a sweet entry that gradually gives way to a fresh finish, maintaining the persistence of the aromatic sensations perceived on the nose.
Food Pairings: Montefalco Sagrantino Passito pairs well with red fruit tarts, dry pastries, hazelnut chocolate, and aged cheeses.
