Il Castagno Syrah
It is made only from Syrah grapes cultivated in our vineyards, with very low yields per hectare (40 q. from 5.000 vines), strictly selected all over the year, particularly before and during the harvest, hand picked (usually from mid-September) into small 15 kg. boxes with ventilation holes.
The grapes are very gently crushed and destemmed (opening but not crushing the berries), then pumped in temperature–controlled stainless steel tanks, where the slow fermentation is carried out for about 15 days; the following maceration of the skins lasts about three more weeks.
Natural malolactic fermentation (only of the free-run wine, because press wine is never used for production of our wines) is spontaneously inducted; follows a long (about 15 months) maturation on lees and ageing period in french premium quality oak barrels from Allier, Nevers and Troncais.
Il Castagno is a powerful, yet well balanced, smooth and elegant wine, with a firm structure and complex, deep and fascinating aromas of red and black berries, chocolate, coffee and white pepper, plus nuances of spices, tar and tobacco; soft-textured, velvety tannins, fruity and spicy palate of gorgeous blackberries, strawberries and cherries, plus a lot of mineral hints, and notes of tar, meat and clove. Finishes with wonderful and long multi–layers of character.
It intends to be a really unique terroir driven, very tuscan Syrah from Cortona, expressing the special, original characteristics of our wonderful region, made with simple, ethical and ecofriendly viticultural methods and winemaking processes, in accordance with the best “technological craftsmanship”.
