Production and Characteristics

The grapes are destemmed leaving the berries intact and conveyed to temperature-controlled steel tanks, where spontaneous alcoholic fermentation occurs thanks to indigenous yeasts. The subsequent maceration of the skins lasts on average from one to two weeks, depending on the quality of the grapes. Malolactic fermentation also occurs spontaneously, without the inoculation of bacteria. Castagnino does not mature in wooden barrels but only in cement tanks.

Sensory Characteristics

Castagnino Syrah Dionisio presents itself with a fascinating clear ruby red color and fresh, floral aromas, with notes of red fruits and juniper berries. In the mouth, it is tasty, fragrant, and balanced, with good structure and concentration, accompanied by lively acidity.

Expression of the Territory

Castagnino aims to be a particularly friendly and drinkable Syrah but absolutely not trivial, deeply varietal but very Tuscan, indeed Cortonese, faithful and original expression of its territory. It is the result of simple, ethical, and environmentally friendly farming and winemaking practices.
