Winemaking

The grapes, upon arrival at the cellar, undergo gentle destemming, pressing, and fermentation at a controlled temperature of 30-32 ºC, with frequent pumping over to optimize color and tannin extraction. Maceration lasts 10-12 days, while malolactic fermentation begins before the end of winter.

Aging

In January following the harvest, the maturation phase begins in Allier oak barriques and 20-30 hl barrels. The wine rests in wood for about a year and, after a short period in stainless steel tanks, is transferred to bottles to complete the aging process.
