Vinification and Aging

With a yield of 60 quintals per hectare, harvesting takes place in September with hand picking in boxes. Vinification begins with soft pressing and maceration on the skins for 30 minutes at a temperature below 5°C. After selection of the limpid part, fermentation begins at a controlled temperature below 20°C for 20 days. Aging takes place for at least 6 months in steel tanks, preserving the wine’s freshness and fruit expression. AFF Rosato enters the market after two weeks of bottle aging.
