This wine is made from an expert blend of grapes, with 60% Merlot and the remaining 40% Cabernet Sauvignon. After fermentation, the wine rests for 6 months in second-pass Allier barriques, followed by an additional 6-8 months of bottle aging.
Suggested pairings: It pairs perfectly with antipasti made with Tuscan cured meats and crostini, as well as with pasta dishes dressed with meat sauce and stuffed pastas such as tortelli and cannelloni.
Serving temperature: 16 – 18°C.

Grape Composition: This wine is crafted from a skillful blend of grapes, with 60% Merlot and the remaining 40% Cabernet Sauvignon.
Vinification Method:
Zizzolo Bolgheri Rosso Fornacelle wine is meticulously vinified, using the single varietal vinification method for each grape. Fermentation takes place in steel tanks at a controlled temperature of 26-28°C, followed by a 12-day maceration.
Aging:
After fermentation, the wine rests for 6 months in second-passage Allier oak barriques, followed by an additional 6-8 months of bottle aging.
Production:
The annual production of this wine amounts to 25,000 bottles.

Color: The wine presents a beautiful ruby red color, enriched with purple reflections.
Nose: Intense aromas of wild berries, pink pepper, vegetal notes, and violet are perceived on the nose, accompanied by subtle hints of spices, sweet tobacco, and balsamic undertones.

Founded at the end of the nineteenth century, our name, Fornacelle, celebrates the ancient kilns that once dotted the landscape and whose traces are still visible beneath our company cellar.
Our family-run business, spanning four generations, covers an area of 15 hectares and carries with it a history rich in tradition and passion for the land. The founders, Osvaldo Billi, his daughter Marisa, and son-in-law Vincenzino Billi, embarked on this extraordinary entrepreneurial adventure, founded not only on the production of wine and extra virgin olive oil but also on the excellence of horticultural productions.
In 1996, Stefano Billi took the reins of the company, bringing with him a new vision and renewed commitment to oenological excellence. He introduced new vineyards and carefully selected grape varieties and clones based on the unique characteristics of the different terrains on our estate. Today, together with his wife Silvia, we continue to cultivate this tradition, dedicating ourselves to the production of high-quality wines that reflect the unique character of our territory.
In addition to our vineyard, our estate also houses an olive grove of approximately 1000 square meters, thus completing our production picture and offering a diversified range of high-quality products.
