Vinification

The grapes, harvested at the ideal ripeness, are destemmed and pressed. The must ferments on the skins for 10 days in stainless steel tanks, then completes fermentation in wooden barrels. Wood aging varies from 8 to 10 months, conferring complexity and structure to the wine.
