Delicate undertones of yellow and white flowers, such as broom, dandelion, hawthorn, and lemon blossoms, further enhance the aromatic profile. The finish reveals bolder hints of thyme, hay, and saffron. In the mouth, it presents an intense profile with a pleasantly refreshing acidity that lingers. Ladies and gentlemen, behold Sua Signoria, the noble Trebbiano, a rediscovery of an indigenous variety vinified with modern expertise. On the nose, it unveils a decisive and strongly identity-driven personality that immediately transports you to the terroir of Montefalco.
Vinification:
The winemaking process involves naturally withering a portion of the grapes, gently pressing them, and allowing them to macerate for one night. Subsequently, this portion is placed in first-passage oak barrels, where it ferments and matures for approximately 4 months. The remaining portion is delicately pressed, fermented at a controlled temperature of 12°-14°C in stainless steel containers, and left in contact with the lees for 6 months. After this period, the wine is assembled, and it undergoes further refinement in the bottle for several months.
Food Pairings:
Trebbiano Sua Signoria Briziarelli, perfectly paired with medium-aged pecorino, featuring a moderately firm texture and a balanced savor. Excellent with white meats, such as grilled herb-infused chicken or rabbit cacciatore with olives and thyme.
