Colle di Rocco Passito Rosso is an enveloping, rich wine made from a selection of traditional black grapes from Umbria, including Ciliegiolo, Montepulciano, Sangiovese, Merlot and Sagrantino.
Suggested pairings: wine is ideal for moments of meditation and pairs beautifully with aged cheeses, dry pastries, panettone, Easter dove, ice cream, nougat and spoon desserts. It pairs beautifully with traditional Umbrian desserts, such as rocciata spoletina, brustengolo perugino, ciaramicola, and torcolo di San Costanzo. Also perfect with any kind of chocolate.
Serving temperature: can be served chilled at 10° C. but if preferred at a room temperature of 20° C.

Our Rosso Passito Colle di Rocco is a captivating and rich wine crafted from a selection of traditional Umbrian black grape varieties, including Ciliegiolo, Montepulciano, Sangiovese, Merlot, and Sagrantino. Bottle Size: 500 ml
Varieties: Ciliegiolo (40%), Montepulciano (20%), Sagrantino (20%), Merlot, and Sangiovese (20%)
Harvest Period: mid-October
Harvest Technique: exclusively by hand
Drying: 2-3 months on racks at a constant temperature (15°C)
Wine Yield: 25% (each quintal of grapes produces approximately 25 liters of passito wine)
Fermentation: in tanks for 20 days at controlled temperature
Aging: in stainless steel for 6-8 months
Alcohol Content: 15.5%
Residual Sugars: 13-16%
Notes: Unpasteurized and unfiltered wine
Tasting Notes:
Rosso Passito Colle di Rocco presents an intense red color and on the nose reveals enveloping aromas of dried grapes, enriched by warm notes of cherry, currant, and blackberry. On the palate, it is aromatic and broad, with perfectly balanced tannins and acidity, harmonized by residual sugars. The finish is persistent, with rich nuances of red fruits.

Serve chilled at 10°C or at room temperature at 20°C.
