Terroir:
The vineyard that gives life to Cùmaro is located in the municipality of Osimo (AN), in the San Lorenzo district. Facing southeast on a hill rising about 150-200 meters above sea level, the soil is characterized by depth and a composition of clay-loam, occasionally sandy and calcareous, with a discreet presence of skeleton.
Yield per Hectare:
The yield, controlled through very short pruning and targeted thinning, varies depending on the seasons, ranging from 60 to 80 quintals per hectare.
Harvest:
The harvest is carried out manually, with the grapes collected and transported in crates. It usually takes place in October, when the Montepulciano grapes, a rather late-ripening variety, have reached an excellent and advanced degree of phenolic ripeness.
Winemaking:
After destemming and a light pressing, the grapes ferment at a controlled temperature of 27-29°C in stainless steel fermenters for 12-14 days, using indigenous yeasts. Subsequently, the wine undergoes malolactic fermentation.
Aging:
Riserva Cùmaro Umani Ronchi is aged in 225-liter oak barrels for a period of 12-14 months. After bottling, it continues to age in a temperature-controlled environment for about 6-8 months.
Tasting Notes:
Color: Deep ruby red, with garnet reflections.
Aroma: Intense bouquet with notes of ripe plum, blackcurrant, and sour cherry, on a spicy background of black pepper, vanilla, and tobacco.
Palate: Soft and enveloping on the palate, with well-polished tannins and a pleasant dry and elegant finish.
Pairing:
Ideal paired with rare red meats, feathered game, and aged cheeses.
Recommended Glass:
A large-sized glass, with a rather wide body to allow proper oxygenation of red wines like Cùmaro, which have been aged for a long time in the bottle.

The winery takes its name from Marco Monchiero and Lucia Carbone, the parents of Francesco Monchiero, who began the winemaking venture using vineyards inherited from both sides of the family. The roots of their winemaking tradition, however, run deep, tracing back through generations of dedicated grape growers from both families.
