Rosa del Castagno Rosato – Fabrizio Dionisio
Rosa del Castagno Dionisio was born as a challenge, with the aim of producing a great Syrah rosé wine in Cortona, enjoyable not only in spring and summer but throughout the year, as a valid alternative to white wine, capable of evolving in the bottle. Balanced, textured, crisp, tense, juicy, intense, refined, and elegant… that’s how I dreamed it, and that’s how those who have tasted it describe it. Exactly the rosé we hoped to achieve. Production and Characteristics
Rosa del Castagno Dionisio is made exclusively with Syrah grapes grown in our vineyards, all characterized by very low yields per hectare (maximum 50 quintals from 5,000 plants), carefully selected specifically for this wine. Harvesting takes place at dawn, exclusively by hand, in small perforated crates of 15 kg. This is followed by a true “white” winemaking process, with immediate and delicate pressing of the grapes, followed by fermentation at low temperatures for about 15 days, without contact with the skins. After about six months of aging on fine lees and a period of natural stabilization, the wine is bottled.
Sensory Characteristics
Rosa del Castagno Dionisio presents itself with a fascinating pale pink color with amber reflections and a fresh, floral, and fruity fragrance, with notes of roses and red fruits. On the palate, one can appreciate its remarkable persistence, pronounced acidity, characteristic savoriness, and distinct minerality, the result of ethical and eco-friendly agricultural and winemaking practices and the magnificent terroir of Cortona.

A Place of the Heart – Where It All Began
Producing wines in Tuscany, in Cortona, at “Il Castagno.” In the early ’70s, my father Sergio purchased a small estate of about seven hectares in a locality called “Il Castagno,” nestled in the hills facing Cortona;
the property included an olive grove and a vineyard. Even though at the time it was only a vacation home, my family’s dream was, even then, to settle more and more in Tuscany and to preserve that corner of paradise by eventually establishing a winery that would finally enhance the natural, extraordinary vocation of the territory for grape cultivation. A unique scenario.
Vineyards with Cortona in Sight
We find ourselves in a sort of plateau nestled among the heights of Casentino, those that delimit the upper Tiber Valley and the Val d’Orcia, dominated by the ancient and noble city of Cortona, nestled on the slopes of Mount S. Egidio and overlooking an enchanting panorama that stretches from Lake Trasimeno to Mount Cetona, from Montepulciano to Mount Amiata. Today, at “Il Castagno,” you can find, in addition to the ancient family home and part of the vineyards, the wine cellar and the barrel room.
