Description Vineyards:
The different plots in the municipality of Bevagna (Pg), in vocabolo Arquata, offer southeast exposure at 230 meters above sea level on clay-limestone soil.
Harvest:
Manual from the second half of September to early October, depending on the different ripening times of grape varieties.
Vinification:
After destemming, fermentation and maceration take place in temperature-controlled stainless steel tanks at 28°C for 21-28 days, with daily pumping over and delestage. Post-fermentation maceration lasts 4-5 days. Aging in oak barrels for 30 months precedes bottling. An additional 12 months of bottle aging complete the process. Our farm covers about 40 hectares of land, 30 of which vineyards and 10 olive groves, located in the hilly areas of Arquata and Colcimino, famous since ancient times for the high quality of oil and wine.
The company was founded in the 60s of the last centuries, from the intuition of Domenico Adanti, who decided to buy the villa of Arquata in order to create a modern winery aiming at a production of high-quality wine. Thus began the renovation of the old convent of the Celestine Friars, built on the remains of the Roman period and then of the late Renaissance, while carrying out the replanting of the old vineyards and the planting of new ones.
