Winemaking:
Our Montefalco Rosso Le Cimate is the result of careful winemaking, respectful of nature. Different varieties are harvested and vinified separately, then blended harmoniously. Fermentation takes place in stainless steel tanks at controlled temperatures, followed by maceration with the skins for 15-20 days. The wine then matures in French oak barrels and oak casks for 12-18 months before further refinement in the bottle for 6 months.

Cellar: Le Cimate
Le Cimate Winery
Our Le Cimate winery was realized only in 2011 after 60 years of wine growing expertise. Bartoloni family has specialized in agriculture since 1800 and owns a total of 170 hectares of land.
Three generations
Three generations of the Bartoloni family have contributed to the construction of Le Cimate winery; grandfather Paolo who has dedicated his life to agriculture and moreover has always specialised in wine growing (he was president of the local Community Winery Colli Spoletini for more than 20 years); his son Giovanni who had the courage to believe in the investment necessary to realize one of the most modern wineries in the area; and his grandson Paolo who, graduate in agriculture, will dedicate his life to wine production and to the future development of the family business.
Vineyards
Our vineyards are located in the area of Casale, 400m above sea level, an area characterized by important temperature ranges from day to night, favored by the presence of the Martani Mountains that surround us.
The almost constant presence of the wind contributes to creating an optimal phytosanitary situation.
Moreover, the clayey soil of moderately calcareous, deep and fresh silt-clayey soil with exposure to the Southeast give us an excellent terroir.
Tecnology and environment
The processing site is of the latest generation and has the highest technology actually present on the market including a manual sorting system for the selection of cru, heating and cooling system for the storage tanks and the all using touchscreen technology and tanks for tartaric stabilization up to -6°C.
It is entirely self-sufficient from an energy point of view thanks to photovoltaic panels integrated into the roof that produce 65 Kw / h.
Vinification
The vineyard extends over 23 hectares of surface, being able to give birth to about 250’000 bottles, having the cellar a storage capacity of 2.700 hectoliters of steel and 500 hl of wood, but the production reaches only 100’000 bottles by choice, focusing on grape selection and quality.
Barricaia and bottaia
Using the best quality wood on the market, our barriques and barrels have a capacity of 50,000 liters and are made up of Slavonic Oak and Allier Oak. The process is completed by 2 full filtration systems and a complete bottling line with a capacity of 1,600 bottles / hour.
