Cuculaia Syrah Cortona – Fabrizio Dionisio
Cuculaia Syrah Dionisio, Cortona DOC by Fabrizio Dionisio aims to be an extreme expression of oenological quality, representing a journey towards the limit to which Syrah can be pushed in the terroir of Cortona. It is produced only in excellent vintages, exclusively with Syrah grapes grown in the homonymous vineyard, part of the Il Castagno estate. Leggi di più
This vineyard is characterized by a unique soil and particularly low yields per hectare (maximum 40 quintals from 5,000 plants), with careful selection of grapes throughout the year, especially before and during the harvest, to produce this high-quality wine.
Vinification and Aging
The remaining grapes from the Cuculaia vineyard, along with the wine obtained from the separate vinification of other high-quality parcels, are blended to create the Il Castagno flagship Syrah, of which Cuculaia is a cornerstone.
Harvesting is strictly manual (usually at the end of September) and the grapes are collected in small perforated crates of 15 kg. After extremely delicate destemming and crushing, spontaneous alcoholic fermentation takes place in stainless steel tanks at controlled temperature.
Subsequent maceration on the skins lasts at least four weeks. Malolactic fermentation involves only the free-run juice and also occurs spontaneously. This is followed by a long period (at least 24 months) of aging on fine lees in French oak barrels and, to a lesser extent, in finely restored cement vats.
