The Ciliegiolo Brecciaro Bussoletti is a wine that tells the story of its land and the vineyards from which it comes. It takes its name from the former breccia quarry in the Brecciaro area of Narni, where 100% Ciliegiolo grapes grow in rocky soils, and from the vineyards in San Gemini, located in Colle Ozio, where the soil is clay-limestone. The vines, aged between 10 and 15 years, are trained using the Guyot system, producing a limited yield of 600-800 grams per plant, ensuring the highest quality of grapes. Harvesting is done strictly by hand, with the grapes collected in 20 kg crates to preserve their integrity and freshness.
The fermentation of the Ciliegiolo Brecciaro Bussoletti occurs spontaneously, respecting the wine’s natural rhythm, and lasts about 6-10 days. After racking, 70% of the wine matures for 12 months in stainless steel on fine lees, while the remaining 30% ages for 9-12 months in large 25-hectoliter French oak barrels. This dual aging process imparts a remarkable balance between freshness, structure, and aromatic complexity to the Ciliegiolo Brecciaro Bussoletti. After bottling, the wine rests for an additional 6-7 months in the cellar, reaching its full expression.

CILIEGIOLO
The rediscovery of lightness
It is underway the progressive affirmation of a winemaking style that leaves behind the fashion of opulent wines, with a marked extractive charge, in favor of more dynamic, lean wines, but of substance and undeniable drinkability, very versatile. Ciliegiolo perfectly interprets this evolution.
Ciliegiolo owes its name to the typical cherry aroma. Its origins are uncertain. According to some sources, it was introduced to Italy by pilgrims returning from a trip to Santiago de Compostela. Other historians argue that the origin is Etruscan. It is universally considered one of the progenitors of Sangiovese. Due to its excellent qualities, Ciliegiolo represents an authentic rediscovery.
Its characteristics
It is a black grape variety; the grapes have a very fine skin and a rather early ripening. The harvest never exceeds mid-September, the grapes tend to oxidation and in vinification to reduction. The vine is vigorous and can produce up to 150/160 quintals per hectare. It gives life to elegant wines with good acidity, non-invasive that can support well over time.
