Castagnino Syrah Cortona DOC – Fabrizio Dionisio
Castagnino Syrah Dionisio is the younger but equally loved and cared-for brother of our signature wine, Il Castagno. Like all our wines, it is made exclusively from Syrah grapes grown in our Cortona vineyards, which are characterized by very low yields per hectare (maximum 50 quintals from 5,000 plants). The grapes are rigorously selected throughout the vintage, especially before and during the harvest, which usually takes place in the first half of September, slightly earlier than for Il Castagno and Cuculaia. Harvesting is exclusively by hand, in small 15 kg perforated boxes.
Production and Features
The grapes are destemmed, leaving the berries intact, and conveyed into temperature-controlled steel tanks where, thanks to indigenous yeasts, alcoholic fermentation occurs spontaneously. Subsequent maceration of the skins lasts an average of one to two weeks, again depending on the quality of the grapes. Malolactic fermentation also takes place spontaneously, without inoculation of bacteria. Castagnino does not mature in wooden barrels but only in concrete casks.

Expression of the Territory
Castagnino intends to be a particularly friendly and drinkable but absolutely non-trivial Syrah, deeply varietal but very Tuscan, a faithful and original expression of its terroir. It is the result of cultivation operations and winemaking practices that are simple, ethical and environmentally friendly.

A Place of the Heart – Where It All Began
Producing wines in Tuscany, in Cortona, at “Il Castagno.” In the early ’70s, my father Sergio purchased a small estate of about seven hectares in a locality called “Il Castagno,” nestled in the hills facing Cortona;
the property included an olive grove and a vineyard. Even though at the time it was only a vacation home, my family’s dream was, even then, to settle more and more in Tuscany and to preserve that corner of paradise by eventually establishing a winery that would finally enhance the natural, extraordinary vocation of the territory for grape cultivation. A unique scenario.
Vineyards with Cortona in Sight
We find ourselves in a sort of plateau nestled among the heights of Casentino, those that delimit the upper Tiber Valley and the Val d’Orcia, dominated by the ancient and noble city of Cortona, nestled on the slopes of Mount S. Egidio and overlooking an enchanting panorama that stretches from Lake Trasimeno to Mount Cetona, from Montepulciano to Mount Amiata. Today, at “Il Castagno,” you can find, in addition to the ancient family home and part of the vineyards, the wine cellar and the barrel room.
