Grape Variety: 100% Nebbiolo
Vinification and Aging:
Soft Crushing: The grapes undergo soft crushing to preserve quality.
Fermentation: With indigenous yeasts for about 15 days at a controlled temperature in wooden vats, with periodic punch-downs for optimal color and tannin extraction.
Submerged Cap Maceration: Followed by a medium-long maceration with the submerged cap technique.
Aging: After racking and malolactic fermentation, the wine matures in oak barrels for 20-24 months, followed by a period in cement tanks before bottling.
Organoleptic Characteristics:
Color: Ruby red with brick-red reflections.
Aroma: Traditional, with hints of ripe fruit and chocolate.
Taste: Full-bodied, with a great structure and an elegant, very persistent tannin.

This historic property houses a captivating cellar beneath its grounds, untouched and perfectly preserved for over two centuries.
The winery takes its name from Marco Monchiero and Lucia Carbone, the parents of Francesco Monchiero, who began the winemaking venture using vineyards inherited from both sides of the family. The roots of their winemaking tradition, however, run deep, tracing back through generations of dedicated grape growers from both families.
