The production process of this exceptional Barolo includes:
Soft Grape Crushing
Fermentation with Indigenous Yeasts:
Approximately 15 days at a controlled temperature in stainless steel tanks, with periodic pump-overs to ensure optimal extraction of color and tannins from the skins.
Racking and Malolactic Fermentation: Followed by transfer to oak barrels for aging for 18-24 months.
Transfer to Concrete Tanks: Subsequently, the wine rests in concrete tanks for several months before bottling.
Organoleptic Characteristics
Color: Ruby red with brick-red reflections
Aroma: Fresh, with hints of dried fruit and leather
Taste: Smooth with a sweet and traditional tannin, elegant and persistent
