This fine wine, Montefalco Sagrantino Passito Adanti comes from two distinct plots in the commune of Bevagna (Pg). The first, in vocabolo Arquata, offers northwest exposure at 230 meters above sea level on clay-limestone soil. First Year of Production: 1975
Montefalco Sagrantino Passito Adanti DOCG, the fruit of an ancient tradition, is the result of careful vineyard selection of the best Sagrantino grapes destined for drying.
With a ruby red color and purple hues, this sweetish wine is a triumph of sour cherry, myrtle, morello cherry and blackberry preserves.
Its wonderful freshness balances harmoniously in the mouth between sweetness and acidity. After aging for 24 months in oak barrels followed by an equal number of months in bottle.
Montefalco Sagrantino Passito Adanti it pairs beautifully with dry pastries, blue cheeses and chocolate cupcakes. Outside of meals, it proves to be an excellent meditation wine.
Harvest:
Manual in the first half of October. The harvested grapes are left to dry naturally in the air for about two months before vinification.
Vinification:
After total destemming, fermentation takes place in stainless steel tanks at a controlled temperature around 25°C. Maceration lasts 12-14 days with daily pumping over until fermentation stops naturally. Aging in oak barrels for 24 months completes the process, giving the wine its distinctive complexity.
