Crafted Vinification and Aging

The grapes, delicately destemmed and gently pressed, are transferred to stainless steel tanks for alcoholic fermentation at a controlled temperature never exceeding 28-30 °C. The maceration lasts about 10-14 days, with targeted mechanical interventions for controlled extraction of aromas, structure, and sweet tannins. After malolactic fermentation, carried out in stainless steel tanks for Sangiovese and in second and third-passage barrels for some batches of other varieties, the various lots are assembled and continue aging in wood, primarily in large barrels and partially in barriques, until the end of spring 2022.

Bottling commenced in August.
